Cellar: it’s a simple word, but within one you can discover an entire universe.
It’s a place where the fruit of immense knowledge, great care and the hard toil of many people gradually find their raison d’être.
It’s a sensorial journey which starts with the drying room, a place where time stands still, where appassimento, drying of the grapes, takes place: the ancient technique first developed in Valpolicella, which is unique in the world. If carried out by expert hands, it endows the famed Valpolicella wines, such as Amarone, Recioto and Ripasso with their unmistakable aromas, colours and gustatory elements.
To walk amongst the great barrels is a unique experience – yet one which is different every year. Here, our finest reds silently rest as they undergo one of the most magical phases, which culminates with them reaching the peak of their expression: aging.
Once finished, they’re moved to our wine repositories: living libraries within our cellar, where wines from the best vintages are stored and left to rest.
